So this post may be to brag about Chance more than me. This morning Chance woke up with me at 6:30 to go running! That is big because Chance is not a morning person and also, he still feels sick when he works out (we do not know what is wrong...it makes me sad that he can't do everything he wants to). But today we ran farther than we have before and he didn't start feeling sick till the end, which is longer than it has been in the past! We are going to try going Tuesdays and Thursdays together. So yeah, good morning. Also here are two good recipes! The first is from Chance's mom, the second from Hailey, Reece's wife. Both so good.
Thai Noodles Serves: 4
(Delicious as a warm main dish
or served cold as a salad)
INGREDIENTS
6 oz. dried vermicelli (or any noodles)
1/4 cup soy sauce
1/4 cup vegetable broth (I use chicken)
2 tablespoons peanut butter
1 tablespoon fresh lime juice
1 teaspoon garlic, minced
1 teaspoon fresh ginger, minced
1/2 teaspoon crushed red pepper
1-1/2 cups cooked chicken, shredded or chopped
1 red sweet pepper, seeded and cut into thin strips
3 green onions, cut diagonally into 1/2 inch pieces
1/4 cup fresh cilantro, chopped
1 lime wedges for garnish
DIRECTIONS
1. Cook vermicelli according to package instructions,
drain and set aside.
2. In a medium saucepan, combine soy sauce, broth,
peanut butter, lime juice, ginger and crushed
red pepper. Cook over medium-low heat until
peanut butter is melted.
3. Add cooked pasta and toss to coat evenly.
4. Stir in cooked chicken, sweet red pepper, green
onions and cilantro.
5. Serve with lime wedges.
Cranberry Chicken
(this is from memory...)
Mix together:
8 oz. French dressing
1 package onion soup mix
1 can cranberry sauce (the jelly kind)
pour over chicken breasts in a pan
bake for 1 hour at 350 degrees (it may be 375...now I can't remember! I think it's 350 haha)
Serve with cooked noodles or rice (we prefer noodles)
